Whole White Wheat Pancakes
2 eggs, lightly beaten
1/4 cup canola oil
2 cups buttermilk (I used 2 cups skim milk with 2 tsp. vinegar)
(dry powdered buttermilk and water can also be used)
2 tsp.
baking soda
1 1/2 tsp.
baking powder
1/2 tsp. salt
2 Tablespoons brown sugar
2 cups DFM Whole White Wheat flour
(you can also throw in some ground flax for added nutrition)
In a medium bowl, mix eggs, oil and milk. Stir in dry ingredients until
blended. May need to add a little more milk.
Heat a lightly oiled griddle over medium - high heat. Pour or scoop
batter onto the griddle, using about 1/4 cup for each pancake. Once
bubbles form on the top of pancakes, flip and cook on the other side
until
nice and brown.
