Fudge–y Whole Wheat Brownies2 sticks butter (melted) or 1 cup vegetable or
canola oil Preheat oven to 350 degrees. Spray a 9 x 13” pan with non-stick spray. Mix cocoa with melted butter. Add remaining ingredients. Spread in the 9 x 13” pan and bake at 350 degrees for 30”. Variations: Add ½ c chopped nuts or coconut to mixture or sprinkle chocolate chips on top just before baking. Another variation of these is to make them "Espresso"! Substitute 2 tablespoons espresso powder into the 3/4 cup of cocoa. For the glaze: dissolve 2 teaspoons of espresso powder in 2 tablespoons water in a medium bowl. Whisk in 1 teaspoon vanilla. Add 1 1/2 cups powdered sugar and 1 tablespoon soft butter and whisk until smooth. Pour the glaze over the brownies. Refrigerate until the glaze is set.
