Mom’s Cracked Whole White Wheat Bread

4 cups boiling water
2 cups cracked whole white wheat
1 cup honey or brown sugar
4 Tbsp. butter
2 Tbsp. salt
2 Tbsp. yeast proofed in ½ c. warm water
7 cups bread flour and 4-5 cups DFM whole white wheat flour

Pour boiling water over cracked wheat to soften. Then stir in honey or brown sugar, butter and salt. Let cool to lukewarm. Add yeast and flours. Adding enough flour to make a nice firm bread dough (not too sticky), let rise till doubled. Punch down and form into 4 loaves. Bake @ 350° for about 30 – 40 minutes. All ovens are a little different. It’s done when you tap the top and it sounds hollow. Brush with real butter while still warm.
